Pop Rocks crackle because pressurized gas is trapped inside each piece.
In 1956, General Foods scientist William Mitchell was trying to make a quick-dissolving soft drink. He mixed flavored sugar with pressurized carbon dioxide. The result was candy fragments, each holding a CO2 bubble at 600 psi. The drink never worked — but the accident sold 500 million packets in its first 18 months.
