Dom Pérignon is named for a monk who spent his career fighting the bubbles.
Pierre Pérignon ran the cellars of the abbey at Hautvillers from 1668, when bubbles were a fault that burst bottles in chain reactions. He favored Pinot noir because white grapes were likelier to sparkle. “Come quickly, I am tasting the stars!”, his supposed cry on tasting the first champagne, first appeared in an advertisement in the late 19th century.
