Chipotle was meant to fund a fine-dining restaurant.
Steve Ells opened the first Chipotle in Denver in 1993 not as the goal, but to raise money for an upscale restaurant. He needed to sell 107 burritos a day to break even. Within a month he was selling nearly 1,000. The fancy restaurant never got built.
