Cheez-It grew out of a cracker a Dayton homeopath baked as medicine.
Dr. William Wolf moved to Dayton, Ohio, in 1841 to practice homeopathy and baked a hard butter cracker as a remedy for patients. When he died in 1897, John W. Green and his son Weston bought the bakery and renamed it Green & Green. In 1921 it launched a flakier cheese cracker, sold as a “baked rarebit”—the Cheez-It.
